Take the botanical complexity of gin and add the sweet yet tart flavours of a freshly made blueberry simple syrup and end up with a refreshing summer cocktail that comes together in just a few minutes.
ingredients:
Simple Syrup:
1/2 cup water
1/2 cup sugar
1 cup fresh blueberries
Add water to a small saucepan over medium/high heat.
Add sugar and blueberries. Bring to boil then reduce heat and simmer for 10 minutes.
Strain through fine mesh sieve. Refrigerate until cool.
Cocktail:
Add 1 ounce Blueberry syrup to a Tom Collins glass.
Add 1/2 fresh lime juice. Don’t skip the lime juice, it’s critical. I found out the hard way.
Add two ounces of your favorite gin and stir.
Add 4 ounces tonic water and top with ice.
Garnish with Blueberries or a lime wheel and serve.
